Don’t worry if people call you a creeper or a stalker because you’re researching the company, in fact everybody does this. Take time to find out about challenges and problems that company is facing. The simplest method is simply to do a Google search. Actually, most companies would even ask you certain questions like “what do you know about our company/stuff we sell/produce” etc. in order to see if you were interested enough to do a research on them. If you stand there without any info about the company you applied your CV for, they would think that you are not well informed and that you were just sending your resumes to random job seeking ads.

Nobody says that you should dress in a suit, but even if you do it won’t be a mistake. After all it is an official interview and with your dress code you are showing respect towards the company, towards the whole process and towards yourself. Some people say that jeans aren’t good for interviews, but if you combine them with a shirt and a coat, it would be a simple causal yet formal combination.

Despre cum se face tuica aia buna

 

Având în vedere că toamna se adună fructele pentru țuică, mai jos desoperiți una dintre cele mai amețitoare activități ale iernii. Toate acestea ca să vă duceți să ajutați la adunat. :)

În primul rând, la ardeleni denumirea corectă e ţuică, nu palincă (aia e la mama lor de unguri), nu horincă (aia e la Maramu’) sau oricare altă denumire. Noi, în Zlatna, îi mai zicem vinars, însă e o confuzie, pentru că vinars vine de la vin ars şi asta ar însemna ori coniac ori “crampam” sau “crampă”, alcoolul făcut cald cu zahăr topit. Dar asta e altă poveste.

Am rămas la ţuică. Ţuica se face, adică ţuica bună, din prune sau din pere. Neamestecate între ele, adică ori de prună, ori de pere. Restul e o porcărie. Dacă scopul e doar să te îmbeţi, poţi face din amestecături: mere, napi sau sfeclă,  pufoaică sau electrozi. Mă îndoiesc că din ultimele două iese ceva, dar legendele locale circulă. Şi sincer, cred că au încercat. La ce concentraţie de nebuni pe metrul pătrat avem sunt convins.

În mare, e destul de simplu. Strângi perele sau prunele într-un “voj” (vas făcut din doage de lemn, de mare capacitate – un fel de “ciubăr”) unde le laşi la fermentat. Unii, pentru gust, mai zdrobesc perele sau pretenţioşii, zdrobesc sâmburele la prună, pentru un altfel de iz. Mno, fiecare cu păsărica lui.

Secretul e când îţi dai seama că sunt fermentate?  Cum e secret, ţin pentru mine. Dacă v-aş zice, ar trebui să vă omor.

Dacă nu vă apucaţi de făcut ţuica (de distilat) pe loc, fructele fermentate, adică “borhotul”, se poate păstra timp mai îndelungat în butoaie de plastic, cu capac.

Să presupunem că vă apucaţi de ţuică. Primul lucru, pregătiţi ceva de mâncare. Tot gustărind la produs s-ar putea să vi se urce licoarea la cap, aşa că e bine să aveţi câte ceva pe aproape. Se spune că grătarele făcute în jarul de sub cazanul de ţuică sunt… îmi lipsesc cuvintele, aşa că îmi ling degetele.

Bun. Aveţi nevoie de cazan. Cazanul e din cupru. Oricine spune altceva e începător, i-a fost lene etc.Cum se face tuica de prune_mere_Mihaela Ivan_Adrian Puiulet_Alex matagau (5)

De ce din cupru?

„Cazanul este fabricat din cupru electrolit de mare puritate, material care este un excelent purtător termic, rezistent la acizii organici rezultaţi din borhot şi nu în ultimul rând îşi pune amprenta asupra gustului şi savorii produsului final.”

Deci, ciocul mic şi mai învăţaţi. Dacă vreţi un cazan autentic, ori îl cumpăraţi de la cineva care îl are din bătrâni (recomand să îl cumpăraţi în timpul “discuţiilor” de la crâşmă) ori mergeţi lângă Sibiu, în comuna Brăteiu, unde cazanul este “făcut în totalitate manual, cu sute de lovituri de ciocan, care lasă pe metal aspectul de „solzi de pește” şi, foarte important, este făcut dintr-o singură coală de cupru.”

Era să uit un mic detaliu. Ţuica de pere „mere’ numa’ întoarsă”. Adică distilată de 2 ori.

Pe scurt, procesul tehnologic cum îl pricep eu:

  • Borhotul se bagă în cazan. Sub el, facem foc. Cazanul e pus de obicei într-un butoi de metal sau doar pe nişte picioare de susţinere, care îl ţin drept.

  • Cazanul e prevăzut cu un sistem deasupra, pe unde intră o tijă care permite amestecarea continuă a borhotului (să nu se prindă).

  • La cazanele sofisticate, această tijă e completată de un mic motoraş, învârtirea nemaifiind astfel manuală. Cazanul mai are şi o gaură de evacuare a borhotului rămas după distilare. Bun. Facem foc sub cazan, învîrtim de numa’ numa’.

  • Deasupra e capacul cazanului, sau „comănacul”, din care iese o ţeavă, care se continuă cu o serpentină. În mod normal, serpentina e cufundată într-un butoi cu apă rece. Trebuie apă curentă, pentru că altfel apa din butoi se va încălzi.

De ce avem nevoie de apă rece? Vine băiatul cu explicaţia.

Prin fierberea borhotului rezultă vapori care se adună în partea superioară, adică în „comănac”, apoi evident că nu au pe unde merge decât prin ţeava respectivă şi ajung în serpentină. Acolo, din cauza apei reci, condensează şi se transformă în… surpriză… aplauze… lichid. Adică ţuică.

La început, de tărie mai mare, apoi pe măsură ce trece timpul, mai slabă. Tăria se poate verifica după gust (pentru gâtlejuri încercate) sau cu un simplu densimetru, 10 lei la ruşi în piaţă.

La prima distilare trebuie avut grijă ca ţuică să nu capete gust amărui sau să se „întulbure”. Ţuica de prună se poate consuma şi aşa, după prima distilare (neîntoarsă), mai ales în partea de sud a ţării. În celelalte zone, te râde lumea.

Pentru întoarcerea ţuicii (adică a doua distilare) procedeul e asemănător. Lichidul rezultat la prima distilare, se pune în locul borhotului în cazan. Evident, trebuie să ai lichid cât să umpli cazanul (de obicei, în funcţie de volumul cazanului, faci mai multe ture pentru o singură întorsură).

V-am pierdut?

Cazanul, înainte de a pune lichidul, trebuie curăţat bine-bine.

Diferenţa, faţă de procedeul iniţial, e că nu mai trebuie mestecat, iar focul trebuie lăsat încet.

Noi ,ardelenii, cum suntem mai deştepţi, facem ţuica iarna. Când e frigul mai aprig, să îngheţe tot în tine. Bănuiesc că altfel te „îndemni” la produsul final. Şi noaptea, că dhe, ce să faci noaptea. Atunci poţi să mai confunzi una cu alta, în loc de borhot să bagi în cazan mâncarea pentru porci sau mai cine ştie ce. Noaptea te poţi împiedica de butoaiele cu lichid magic pentru care ai lucrat câteva ore (în noaptea respectivă) sau zile (per total.)

Oricum, a face ţuica e ceva magic, din cele mai îndepărtate timpuri. Unii zic că au pornit răscoale din cauza acestei licori. Eu pot să-i contrazic, deoarece știu doar de răscoala lui Horea, dar şi aceea nu a pornit de acolo, a fost doar „picătura care a umplut paharul”, ca să mă exprim corect.

Noi nu suntem de felul nostru mai duşi, mai săriţi. În copilărie, părinţii noştri şi toată familia aveau de lucru la fân şi moaşe sau bone nu prea se inventaseră. Aşa că e simplu să faci un milk-shake, cu lapte şi ţuică pentru somnul copiilor tăi.

2. Don’t just reach out to reach out – have a purpose.

Don’t just reach out to someone for no good reason. Have a reason – Reach out with a goal in mind. Do you think this person can share some valuable insight on your industry? Do you want to learn more about the company this person is working for?

3. Always be enthusiastic and respectful.

When you’re talking with someone, actually LISTEN to what he or she is saying. Don’t disrespect them by looking around the room, checking your phone, or zoning out. Remember, they’re taking the time to talk with you, the least you can do is show a little enthusiasm and respect.

4. Show them your personality.

Being professional doesn’t mean you should forget your personality. Your personality is what makes you stand out. People remember personality – Be yourself!

5. Ask about their goals.

What do they want to accomplish? What are their goals? Everyone loves talking about themselves – it’s an easy topic to jump into!

6. Offer value.

Before you ask, “What can you do for me?” you should ask, “What can I do for you?” Share a relevant article. Invite them to join an industry-specific group. Ask them how you can help them achieve their goals, and they will likely return the favor.

7. Check in.

Don’t just let your connections collect dust in your LinkedIn account! Check in with them every once and a while to see how they’re doing. It’s important to nurture your network – If you just reach out to someone asking for a favor after not talking with them for two years, they might not be very responsive. Check in!
